Garbanzo Bean Spicy Spread

Ingredients

2 cups of soaked and cooked garbanzo beans.  I prefer to soak mine for 24 hours and then pressure cook them in my InstantPot for only 10 minutes with garlic and natural salt.  Soaking, Sprouting and Fermenting Legumes aids in digestion and assimilation of other valuable nutrients. 

1 Tablespoon of Organic Olive Oil

Juice of 1 Large Organic Lemon

1/4 Cup of Chopped Serrano Peppers (or peppers of your choice)

1/8 teaspoon of cayenne pepper

(Note: add any spices that you love to this spread)


Process:

Place all ingredients into blender/Vita-mix and blend until desired consistency. I prefer my bean dip to be very smooth without the gritty texture.  Pressure cooking also helps reach this desired consistency.

Spoon into bowl and enjoy with your favorite chips.  My favorites are Jackson's Honest Chips made with organic heirloom potatoes, coconut oil and sea salt.

Cauliflower Cheese Sticks & Cilantro Pesto

Cheese Stick Ingredients :: (Same as Cauliflower Pizza Crust ingredients)

  • 1 head of Cauliflower

  • 1 egg

  • 1/3 cup of creamy goat cheese

  • 1 tsp. Olive Oil

  • 1/4 cup of Raw Cheese- Parmesan is my favorite

  • 1/4 tsp. of pink salt

 

Cilantro Pesto Ingredients ::

  • 1 handful of fresh cilantro (about 1 cup)

  • 1 serrano or jalepeno pepper (add more for additional heat)

  • 1/3 cup of organic olive oil

  • 1 garlic clove

  • juice of 1/2 lime 

  • 1/4 tsp of pink salt 

 

Process:: Cauliflower Crust

  • Pulse 1 Head of Cauliflower in Blender/Food Processor/VitaMix until rice size- will yield approximately 3-4 cups.

  • Boil 1/2 cup of water in pot

  • Place cauliflower in boiling water, reduce heat and cover for approximately 5 minutes.

  • Place cauliflower in a thin kitchen towel and squeeze out the excess water.

  • Place in bowl and mix with 1 pasture egg and 1/3 cup of creamy goat cheese.

  • Roll onto parchment paper- as thin as you like and place in 400 oven until desired texture.  (I like mine very crunchy so I press it really thin and cook for approximately 45 minutes or more)

  • Remove from oven and brush with Olive Oil, sprinkle with raw cheese and pink salt,

  • Bake again for 5-10 minutes

  • Serve with your favorite pesto, honey or dip.

  • YUM!

Process: Cilantro Pesto

  • Place cilantro, hot pepper, olive oil, garlic, lime and pink salt in Blender/Food Processor/VitaMix until well blended with desired pesto consistency.

  • Pour into bowl and serve with your favorite healthy cracker, vegetable or cauliflower cheese sticks!

  • DELICIOUS!
