Red Quinoa Stir Fry

Quinoa Stir Fry is so nutritious and delicious.  Quinoa is naturally gluten-free, contains many vitamins & minerals, and is the only plant food considered to be a complete protein with 9 essential amino acids.  1 cup of quinoa yields 8 healthy grams of protein.

INGREDIENTS:

Organic Red Quinoa = 1 Cup

Filtered Water = 2 Cups

Pasture Raised Eggs = 2 - 3

Organic Mushrooms = 1/2 - 1 Cup

Organic Ground Cayenne Pepper = 1/2 Teaspoon

Organic Celtic Salt = 1 Teaspoon

Organic Ground Cumin = 1/2 Teaspoon

Organic Ground Chili Powder = 1/2 Teaspoon

Organic Black Ground Pepper = 1/2 Teaspoon

Ghee or Coconut Oil = 1 Tablespoon


INSTRUCTIONS:

 I prefer to prepare my Quinoa in my InstaPot, but you can also prepare the Quinoa in a saucepan (see below).

InstaPot Quinoa: Place one cup of Quinoa into Instapot, cover with 2 cups of filtered water, and add seasonings of choice.  Cover and place on rice setting.  Instapot will take approximately 10 minutes to complete and Quinoa will be perfectly fluffy.  Hint: make extra to use in other recipes throughout the week!

Cast Iron Skillet - Place 1 tablespoon of ghee in cast iron skillet and sauté mushrooms with salt and pepper.  Add 2 pasture raised eggs, scramble gently with mushrooms, add Quinoa to the mix and sauté together for a few minutes.  

Serve and enjoy!

Stove top Quinoa: Add 2 cups of water and salt to sauce pan and bring to a boil.  Cover, reduce heat to medium low, and let simmer until water absorbs- about 15-20 minutes.  Remove from heat and let set aside for 5 minutes, uncover and fluff with fork. 

Ideas: Add spinach or any other veggies to your stir fry! Experiment with seasonings and enjoy this healthy and nutritious dish.

Stuffed Nori

Rice & Avocado Stuffed Nori Rolls

Stuffed Nori Rolls are great as a nutrient packed meal or served as an hors d'oeuvre for your guests.

Stuff Nori Roll Ingredients:

  • Organic Nori Seaweed sheets. I use Emerald Cove Organic Pacific Nori (6-10 sheets)
  • Sprouted Organic Rice. I use Trader Joe''s Organic Sprouted Rice- or any rice you prefer (1 1/4 Cup) 
  • Ripe Avocado ( 1-2 Avocados)
  • 1 Organic Lemon
  • Cumin (to taste)
  • Cayenne (to taste)
  • Natural Salt (to taste)
  • Other Spices- as you prefer (to taste)

Process:

  • Prepare Rice as instructed on cooking instructions and set aside to cool
  • Mash 1 - 2 Avocados and mix with desired amount of cooked sprouted rice. Use as much avocado and/or rice as you prefer. 
  • Season mixture with preferred spices
  • Gently toast Nori sheets in toaster oven or oven (very low temp for 1-2 minutes) You can also use them raw.  Toasting lightly will give them more of a nutty flavor.
  • Tear or cut desired size of Nori roll (I cut about 3 inches long and 1 inch wide), place a small tsp. of rice and avocado mixture on Nori strip, gently squeeze lemon juice on each end to help the Nori stick, and roll up to form your Nori roll.

Cauliflower Pizza OMG!

Ingredients ::

  • 1 head of Cauliflower

  • 1 egg

  • 1/3 cup of creamy goat cheese

  • 1 tsp. Olive Oil

  • 1/2 cup of raw cheese

  • Top with: tomato, sausage & olives


Process::

  • Pulse 1 Head of Cauliflower in Blender/Food Processor/VitaMix until rice size- will yield approximately 3-4 cups.

  • Boil 1/2 cup of water in pot

  • Place cauliflower in boiling water, reduce heat and cover for approximately 5 minutes.

  • Place cauliflower in a thin kitchen towel and squeeze out the excess water.

  • Place in bowl and mix with 1 pasture egg and 1/3 cup of creamy goat cheese.

  • Roll onto parchment paper- as thin as you like and place in 400 oven until desired texture.  (I like mine very crunchy so I press it really thin and cook for approximately 45 minutes.)

  • Remove from oven and brush with Olive Oil, sprinkle with raw cheese, and top with thinly sliced tomatoes, olives, sausage or whatever you like on your pizza.  

  • Bake again for 5-10 minutes

  • YUM!
