Cheese Stick Ingredients :: (Same as Cauliflower Pizza Crust ingredients)
1 head of Cauliflower
1 egg
1/3 cup of creamy goat cheese
1 tsp. Olive Oil
1/4 cup of Raw Cheese- Parmesan is my favorite
1/4 tsp. of pink salt
Cilantro Pesto Ingredients ::
1 handful of fresh cilantro (about 1 cup)
1 serrano or jalepeno pepper (add more for additional heat)
1/3 cup of organic olive oil
1 garlic clove
juice of 1/2 lime
1/4 tsp of pink salt
Process:: Cauliflower Crust
Pulse 1 Head of Cauliflower in Blender/Food Processor/VitaMix until rice size- will yield approximately 3-4 cups.
Boil 1/2 cup of water in pot
Place cauliflower in boiling water, reduce heat and cover for approximately 5 minutes.
Place cauliflower in a thin kitchen towel and squeeze out the excess water.
Place in bowl and mix with 1 pasture egg and 1/3 cup of creamy goat cheese.
Roll onto parchment paper- as thin as you like and place in 400 oven until desired texture. (I like mine very crunchy so I press it really thin and cook for approximately 45 minutes or more)
Remove from oven and brush with Olive Oil, sprinkle with raw cheese and pink salt,
Bake again for 5-10 minutes
Serve with your favorite pesto, honey or dip.

Process: Cilantro Pesto
Place cilantro, hot pepper, olive oil, garlic, lime and pink salt in Blender/Food Processor/VitaMix until well blended with desired pesto consistency.
Pour into bowl and serve with your favorite healthy cracker, vegetable or cauliflower cheese sticks!
