PUMPKIN PIE LOAF

Pumpkin Pie Loaf

This recipe is a little like Pumpkin/Nut Bread and Pumpkin Pie rolled into one.  It's very moist, nutritious and delicious.

INGREDIENTS:

1.5 Cups of RAW Nut Butter (Almond, Cashew...)

2 Eggs

1/4 Cup of Honey

1 Teaspoon of Vanilla

2 Tablespoons of Softened Butter

1 Cup of Organic Pumpkin

2 Teaspoons of Apple Cider Vinegar (optional for flavor enhancement)

1/4 Teaspoon of Salt

1/4 Teaspoon of Baking Soda

4 Tablespoons of Einkorn Flour

1 Teaspoon of Cinnamon

1/2 Teaspoon of Ground Ginger

1/2 Teaspoon of Ground Nutmeg

1/8 Teaspoon of Ground Cloves

INSTRUCTIONS:

Mix together (Wet Ingredients) Raw Nut Butter, Eggs, Butter, Pumpkin, Honey, Vanilla and Apple Cider Vinegar.  In separate bowl sift together Salt, Flour, Baking Soda, Cinnamon, Ginger, Nutmeg, Allspice and Cloves.  Gently add dry ingredient mixture to wet ingredients and stir well.  Place in buttered or baking paper lined loaf pan.  Bake at 350 degrees for approximately 15-20 minutes. Let cool, remove from pan, and enjoy a slice!
