Ingredients ::
1 head of Cauliflower
1 egg
1/3 cup of creamy goat cheese
1 tsp. Olive Oil
1/2 cup of raw cheese
Top with: tomato, sausage & olives
Process::
Pulse 1 Head of Cauliflower in Blender/Food Processor/VitaMix until rice size- will yield approximately 3-4 cups.
Boil 1/2 cup of water in pot
Place cauliflower in boiling water, reduce heat and cover for approximately 5 minutes.
Place cauliflower in a thin kitchen towel and squeeze out the excess water.
Place in bowl and mix with 1 pasture egg and 1/3 cup of creamy goat cheese.
Roll onto parchment paper- as thin as you like and place in 400 oven until desired texture. (I like mine very crunchy so I press it really thin and cook for approximately 45 minutes.)
Remove from oven and brush with Olive Oil, sprinkle with raw cheese, and top with thinly sliced tomatoes, olives, sausage or whatever you like on your pizza.
Bake again for 5-10 minutes
